Lime Cheese Cake

750gm           cream cheese
150ml            fresh cream 
5 no                eggs (seperated)
50gm             castor sugar
30gm             gelatine
30ml              lime juice

Let cream cheese come to room temperature, add orange zest. Add eggs and lime juice, mix in well, whisk egg white gradually adding the sugar till hard peak stage. Dissolve the gelatine and mix into the cheese mixture. Fold in the egg white gently and pour into the round  mould.
Place in fridge for one hour.
